Playoffs: New England Patriots @ Denver Broncos

For this game, we didn't really plan on making anything so I had free reign to decide what I wanted to make. As such, I decided that I would need to make something easy and manageable. What does that mean? Chicken Stir Fry!

Ingredients: 
2 bell peppers, cut into thin strips
1/2 pound chicken tenders/breast, cut into bite size pieces
3 large carrots, cut into thin strips
1 large onion, sliced
4 garlic cloves, chopped
serranos, chopped or sliced (use as many as you can handle, these guys are really spicy!)
splash soy sauce
1 tsp salt to taste, or you can use season salt (which I did)
2 tsp black pepper for taste
1 tsp ginger, dry or fresh
1 bottle Kikkoman Stir Fry Sauce
1/2 cup veggie oil

Recipe: 
1. Marinate cut up chicken with ginger, salt, pepper, soy sauce and garlic.
2. In a large saucepan on high heat, add veggie oil, carrots, onions, and bell peppers. Let cook for a minute.
3. Add chicken and let cook for about 10 minutes.
4. Add 1/2 bottle of Kikkoman Stir Fry Sauce and serranos. Let cook until chicken is cooked through. If you'd like more sauce to the dish, add more of the stir fry sauce. Serve over white rice.

This is such a simple dish. The only thing that really takes much time is cutting all the veggies and the chicken up. This is my go to weekly meal because it's so quick and easy. You could also change up this recipe to add any type of meat or veggie you prefer. You can also change out the sauce and use a teriyaki sauce or even a black bean sauce. Oh man would a black bean sauce taste good with this!

Try this and see what you think. With a game as spicy as that AFC Championship, this was the perfect dish to eat. Congrats to the Broncos on the W and see y'all at the Super Bowl. I think we will be prepping for BBQ. yes!!!
